1 Large egg  
2 Large egg yolks  
 115g Plain Flour  
300ml Milk  
1 tbspn Caster Sugar  
25g Butter  


Beat the eggs and caster sugar together. Add a tablespoon of melted butter and mix well.

Sieve in half the flour and stir until smooth. Add a little milk to thin the mixture, whisking continuously to avoid lumps then add the remaining flour followed by the milk.

Heat a 20cm flat frying pan on a medium-high temperature. Add a small blob of butter and swirl around the base. Pour in the batter mixture, just enough to coat the base of the pan.

After about a minute, when the batter mixture has cooked, toss the pancake over to cook the other side. Transfer to a plate kept warm on top of a simmering pan and cover with a bowl.

This recipe should make four pancakes.
